The tomato contains certain quantities of vitamins: B vitamins, ascorbic acid, vitamin D and, above all, vitamin E, which provide the tomato with the known antioxidant and vitaminising properties. The mineral component is rich: iron, zinc, selenium, phosphorus and calcium associated with citrates, tartrates and nitrates act in synergy, ensuring re-mineralising and anti-radical properties. They also contain, in lower percentages, organic acid content, such as malic, citric, succinic and gluteninic, useful for promoting digestion. The tomato is also excellent for its refreshing and depurative effect, useful for eliminating excess waste. This property is enhanced by the presence of sulfur, thanks to its detoxifying capabilities.
