Cauliflower is a variety of Brassica oleracea, with intense dark green leaves and a central inflorescence which consists of ramifications with a geometric character. This one is called head – or curd – and it needs a cool climate to grow up luxuriantly and with a strong taste. It is consumed mainly during the winter and it can resist to low temperature, maintaining colours, flavour and consistence. Cauliflower is good for human health, also because it stimulates the thyroid gland, regulate the beat of the heart, as well as the arterial pressure and blood pH.
The central inflorescence of cauliflower is covered and protected naturally by its leaves. In order to preserve freshness, minerals, vitamins and all the antioxidant and anticancer proprieties, it should be placed upside down in a cool and dry place.
An odor neutralizer
The typical strong smell released by cauliflower during the cooking phase can be reduced putting on the top of the lid of the pan a simple slice of stale bread soaked in vinegar.
In the village of Tuscania (Viterbo, Lazio) takes place in January the Cauliflower Fritters festival: a mouth-watering opportunity to taste this delight.
