A plant of ancient origin, artichoke is a Mediterranean vegetable that belong to the Asteraceae family.
Depending on the plant, its purplish fruit differs in colour shades, taste and size. The main varieties are:
- Mammole artichoke is a spineless and extremely soft variety with a compact shape. This vegetable shows a green colour with purplish shades
- Terom artichoke, whose intense dark violet leaves, arranged in the form of a rosette, hide a branched oval-shaped floral scape
- Violetta artichoke has an intense violet colour and a cylindrical-shaped medium-large flower
In order to preserve the freshness and all the proprieties of artichokes, before storing them it is recommended to cut off stems and external leaves and to wrap the artichokes in a cloth. Then, put them in a plastic bag, leave it open and store it in the refrigerator.
Looking for freshness
Recognizing the freshness of artichoke is very easy: a fresh artichoke is hard to the touch and its leaves are well tight – best if leaves are still attached to the stem.
During the months of April and May, artichoke becomes an undisputed star of the food festival of Piombino (Livorno, Tuscany). A precious opportunity to discover all the tastes of this great vegetable.
