Aubergine is a vegetable that is harvested mainly in the summer period. With the typical shape that recalls a bag, it can vary in shape depending on the area of cultivation. It is very appreciated and consumed also because rich in nutritional and purifying properties.
It is recommended to preserve aubergines in the refrigerator just for a few days, whereas it can be conserved in the freezer for several months.

When it’s cut up, its pulp tends to blacken, but it is a natural defence mechanism against external agents. Moreover, the typical black-violet colour of the skin is useful because it protects the aubergine from UV rays.
A traditional appointment for all the eggplant lovers is the food festival of Reggio Calabria that takes place in August at Parco Verde of Salice. To taste the eggplant in a sweeter variant, the right place is Maiori (Naples, Campania) with an event which celebrate many dishes made with aubergine or chocolate.
