Cultivated since Roman times, cardoon is the “brother” of gobbo, with which it shares the same plant but a different process of cultivation and growth. The plant of cardoon is tightly wrapped, making sure that it grows in the dark, its ribs remain straight. On the contrary, the plant of gobbo has a lateral curvature that allows to the ribs to grow curved, obtaining a more delicate flavour.
In order to preserve cardoon, you just need to hang it up. Otherwise, you can wrap the base of cardoon with aluminium foil, put it in a perforated plastic bag and store it into the refrigerator. It is recommended to blanch it before freezing it.
Cardoon and women
Well-known for its protective and decongestant proprieties, the cardoon is an excellent remedy in cases of intestinal inflammation and PMS headache. Because of its lactogenic proprieties it is prescribed to new mums to stimulate the production of mothers’ milk.
